Maccarones Su Ghimisone - Malloredus

Maccarones Su Ghimisone - Malloredus

Maccarones, also known as "Sardinian gnocchi" (gnocchetti sardi), is a typical pasta from Sardinia, especially from the "Campidano" area in the Midwest, that resembles ribbed shells, like the famous "coffee bean trivia" shell. They form the basis of the most commonly prepared Sardinian dish, served on most important occasions, from family gatherings to feasts and weddings.

Better known as "Gnocchetti Sardi", the Maccarones are made with Su Ghimisone stone-ground durum wheat flour with wheat germ and drawn with bronze. They are about 2 cm long and are made with only two ingredients - durum wheat and water.

They have an handcrafted and genuine appearance; the bronze die makes it possible to obtain a pasta characterized by a roughness and porosity that allows it to optimally absorb traditional sauces and gravies. These characteristics make the pasta creamy and homogeneous, making it very tasty and inviting.

Macarrones pair well with traditional sauces such as "ghisadu", "campidanese", ricotta and walnuts or with fresh fish and fresh seasonal vegetables.

Maccarones are an opportunity for chefs who value quality ingredients and sustainability, because this pasta is made exclusively with local durum wheat. This is a clear sign of distancing from the industrial pasta production that takes place on the mainland

  • Meet the producer - Su Ghimisone

"Molino su Ghimisone" specialises in the production of flour and semolina exclusively "Made in Sardinia". The flours and semolina of "Su Ghimisone" are of high quality and stone-ground with the wheat germs.

Only carefully selected durum wheat grown in Sardinia is used.

The amber colour of the flour is due to its nutritional components. Good fats, minerals, group B vitamins, tocopherols (vitamin E), proteins and amino acids provide the special colour.
