Malloreddus, also known as "Sardinian gnocchi" (gnocchetti sardi), is a typical pasta from Sardinia, especially from the "Campidano" area in the mid-west, which resembles ribbed shells, like the famous "coffee bean trivia" shell.

They form the basis of the most commonly prepared Sardinian dish, served on most important occasions, from family celebrations to feasts and weddings.

 

Malloreddus are an opportunity for chefs who value quality ingredients and sustainability, as this pasta is made exclusively from local durum wheat. This is a clear sign of distancing from the industrial pasta production that takes place on the mainland.

 

Malloreddus are about 2 cm long and are made from only two ingredients - durum wheat and water - and make an excellent pairing with sauces and ragù. By the way, the classic dish of Sardinian cuisine is "Malloreddus alla campidanese", a really delicious dish with sausage stew and saffron.

 

Malloreddus are undergoing a bronze pressing process during production, which creates a surface texture that combines perfectly with the sauces.

 

 

  • Production process

    Malloreddus is made exclusively from "Su Mori" durum wheat flour, obtained from durum wheat grown in Sardinia and grinded in the "Su Mori" mill. It is dried slowly and patiently, and roasted according to island tradition by the pasta factory "I Cagliaritani" in Settimo San Pietro.
