Pistigione Su Ghimisone - Fregula sarda

"Pistigione" is the Barbagian name for the famous fregula.

The fregula is a semolina pasta that goes back to ancient origins and is part of the panorama of traditional excellence of Sardinian gastronomic culture. The pasta is made from stone-ground durum wheat semolina with wheat germ, drawn in bronze and roasted in the oven to obtain an authentic and refined taste.

It is the basis for a variety of delicious recipes and goes well with seafood, shellfish and fish.

It is also ideal for summer recipes such as cold salads with garden vegetables or risotto with excellent wild mushrooms or for making soups such as the traditional "minestra in frughe"

  • History and tradition

    The name "fregula" is said to derive from the Latin word "ferculum", which could mean crumb in connection with verbs like rub ("sfregare") or frise ("frisare)". On the other hand, "ferculum" also means "food", "dish" in general. The real curiosity, however, is that the "ferculum" is also a wide and flat serving tray: in practice, the indispensable tool for preparing Sardinian fregula.
