Maccarones, also known as "Sardinian gnocchi" (gnocchetti sardi), is a typical pasta from Sardinia, especially from the "Campidano" area in the Midwest, that resembles ribbed shells, like the famous "coffee bean trivia" shell. They form the basis of the most commonly prepared Sardinian dish, served on most important occasions, from family gatherings to feasts and weddings.

 

Better known as "Gnocchetti Sardi", the Maccarones are made with Su Ghimisone stone-ground durum wheat flour with wheat germ and drawn with bronze. They are about 2 cm long and are made with only two ingredients - durum wheat and water.

 

They have an handcrafted and genuine appearance; the bronze die makes it possible to obtain a pasta characterized by a roughness and porosity that allows it to optimally absorb traditional sauces and gravies.These characteristics make the pasta creamy and homogeneous, making it very tasty and inviting.

 

Macarrones pair well with traditional sauces such as "ghisadu", "campidanese", ricotta and walnuts or with fresh fish and fresh seasonal vegetables.
